Afghani Food

Different variety of Afghan Food is mentioned in filmannex by many writers which I read them completely and it was interesting.

But I did not find any information about one Afghani Food while searching filmannex. Thus, I decided to write something about that food and that is “NanMaska”.

In Dari languageNan” means Bread and “Maska” means Butter. Nanmaska are cooked and eaten mostly in the North East of Afghanistan Takhar and Badakhshan Province during the summer in mountainous places while the people leave their houses to mountainous places called "Yailaq" to feed their animals such as sheep, cow, goat and so on.

They stay in Yailaq until the weather gets cold and at the end of summer, they return back back to their original houses bringing butter, yogurt, dry yogurt called “Qorot” and any other food which is produced from milk.

Badakhshan people while being in Yailaq during summer, they mostly cook the Nanmaska which is famous and eaten during all times. In order to cook the Nanmaska, they first make a dish which is made from mad called "Tandor". taking Tandor is not an easy task and only the experts can do this job as shown as below picture.

Then they burn woods and cook a very thick bread called Nan. Since the bread is cooked, then immediately they apply  the pure and fresh butter in to that bread when the bread is too hot. Later they are going to eat or host to their special guests by Nanmaska.

Why they like and eat Nanmaska as Afghani Food during the summer? Because the weather of the mountainous area are cold during the nights. So Maska will keep them warm and protected them from the coldness and also, Nanmaska as Afghani Food is very delicious and it is their favorite food during the summer.
