Manager confectionery in the historic center of Miercurea Ciuc, Botond Bartis, reveals special story Dobos cake, created in 1884 by Jozsef Doboş, one of the most famous confectioners in Budapest.

'The recipe was created in 1884, when Jozsef Doboş wanted to make a cake that can be stored and transported for longer, since at that time there was no cooling technologies. And after its creation, Doboş cake has become so popular that was transported in Vienna, Berlin or Paris.

He was transported by wagons, wooden boxes filled with ice and salt for two to three days, without any problem, '' Bartis Botond story begins.

The cake was first presented in 1885, the first General Exhibition in Budapest, and the first who tasted delicious cake was Emperor Franz Josef and his wife Sissi.

Doboş cake conquered its simplicity and elegance, given that, in time, the cakes were overly decorated with several floors and whipped cream, no butter. Moreover, Doboş cake was the first time that the cake was made with butter cream and chocolate cream.

As a curiosity, Botond Bartis tells us that the famous butter cream of Doboş was born from a ... mistake.

Renowned pastry had a disciple who, one day preparing a butter cream, put accidentally crystallized sugar in it and not just a pinch of salt, as was common. The belief then was that if a put sugar butter cream, it was missed. Jozsef Doboş, however, has not thrown 'cream compromised' to his disciple, he started working with her and so was born buttercream, which 'contains some salt, but also contains sugar, which became extremely popular and that today is based creams confectionery '.

Cake recipe is not complicated and uses fewer ingredients and unpretentious.

'' Our cafeteria comply original recipe, the one developed by Jozsef Dobos. That means Doboş slice contains six discs, made from egg yolk, egg white, butter, sugar, a little flour and salt. Cream is made of Belgian chocolate with a cocoa content of 53%, butter and margarine and egg yolk not steamed. Above, the cake is topped with a caramelized crust, which contains sugar, a little butter and a drop of vinegar ', explains Bartis Botond.

The process of making the slice Doboş takes a few days. First is the top, then the cream and then the cake is assembled and should be allowed to rest and to 'befriend' tops with cream and the last day is done strictly caramelized coating, which is placed just before serving.

'' When someone goes to a coffee shop, anywhere in the world - Budapest, Vienna, New York and Singapore - it is easy to realize that slice Doboş is performed after its original recipe. Because dough should be very crispy caramel and creamy taste to be one intense chocolate. (...) The slice Doboş is made of six discs and, compared to other confectionery us using chocolate cream and cocoa cream and butter no, not margarine ', says Bartis Botond.

Doboş cake recipe was kept secret for 20 years by its creator, even though many confectioners across Europe have tried to copy. In 1906, when Jozsef Dobos decided to withdraw from the activity, revealed recipe Budapest Confectioners Association members, provided that it is used only by them.
