Mint Crinkle Cookies – the perfect amount of crispy, soft and chewy, minty goodness, covered in blissful powdered sugar sweetness; your tasty St. Patrick’s Day crinkle cookies.

These Mint Crinkle Cookies gave me a little bit of flack. In fairness, it wasn’t the cookie’s fault. This recipe calls for melted better and for the first time ever, I had butter explode in my microwave. You see this baker didn’t cover her butter since it has never exploded before and well the microwave was covered and dripping with melted butter. I suppose I should consider myself lucky that this was the first time this happen

After I cleaned up my microwave, I started over with the melting of the butter and this time I covered the bowl. Other than that these Mint Crinkle Cookies are pretty straight forward.

Today’s Mint Crinkle Cookies are super easy to make, in fact the hardest part is rolling them around in sugar and powdered sugar, which isn’t hard either. This cookie recipe has seven ingredients: white boxed cake mix, melted butter, eggs, peppermint extract, green food coloring, granulated sugar, and powdered sugar.

To make these minty green cookies you’ll dump all the ingredients minus the sugars into a mixing bowl and mix-mix-mix until all the ingredients are combined. After that you’re just prepping for baking.

Mint Crinkle Cookies

Ingredients

1 white boxed cake mix (16.25 oz)

6 tablespoons butter, melted

2 large eggs

3/4 teaspoon peppermint extract  

green food coloring *

1/4 cup granulated sugar

2/3 cup powdered sugar

Instructions

Preheat oven to 375F degrees.

In a large bowl using an electric mixer, mix together boxed cake mix, melted butter, eggs, peppermint extract and green food coloring; mix until combined.

Place granulated sugar and powdered sugar in separate shallow dishes. Scoop dough into tablespoon balls using a #50 disher and drop into granulated sugar and roll to coat. Transfer dough balls to powdered sugar and roll to coat. Evenly space dough balls on baking sheet.

Bake 9-11 minutes, until puffed and cracked and edges have begun to set but centers are still soft (cookies will look raw between cracks and seem underdone).

Cool cookies on baking sheet on wire rack for 5 minutes; transfer to a wire rack to cool completely. Eat & Enjoy!
