Philippine Dish "Kaldereta"

Hello Bitfriends! Since I love cooking I have decided that each time I would cook some special dish at home I would write it down and make a blog out of it. Today I would write about one of my "sunday's best" and that is no other than my own version of Kaldereta!

Kaldereta is a native Filipino dish made from tomato sauce, liver paste, carrots and potatoes. Kaldereta's name was derived from a spanish word "caldera" which means cauldron. 

Kaldereta can also be cooked using beef and chicken but for special occasions others would use goat meat for their Kaldereta. I prefer using pork ribs for Kaldereta because pork meat is way lot cheaper compared to goat and beef meat.

I would usually ask for the butcher to slice the meat for me for I don't have the proper knife and of course the abilty to cut the bones. :)

It is my pleasure to share with you guys my own recipe of Kaldereta. For my Muslim friends that doesn't eat pork you can always substitute the pork for beef, goat or chicken meat, you may also try using mutton but I personally haven't tried it for myself. as for the sauce I prefer making my own rather than buying instantly made Kaldereta sauces that is available in the market though it is more convenient for those people who is always on the go and has no time for slow cooking.

Here's what we will need to cook Kaldereta.

Ingredients:

1 kilogram Pork Ribs Cut approximately 2 inches thick.

1 head Garlic minced

1 medium size Onion

1/2 cup Butter

1 cup Soy sauce

1/2 cup Calamansi or Lemon juice

3 - 4 dried bay leaves

a dash of finely ground Pepper

sugar salt and ajinomoto seasoning ( a pinch will do )

2 pieces Medium sized potato cut into cubes approximately 1.5 inches thick

2pieces medium sized carrots cut into cubes approximately 1.5 inches thick

1 piece red bell pepper sliced 

1/4 block cheddar cheese 

400 grams tomato sauce

1 cup Liver spread ( I use reno liver spread )

3-5 pieces chilli peppers (I love it spicy)

Procedure:

Marinate

1. Combine the ribs, half of the minced garlic, bay leaves, soy sauce, calamansi juice, half teaspoon of ground pepper, a pinch of sugar and ajinomoto, marinate for 1 hour. i usually marinate it over night and keep it in the refrigerator for a more tastier outcome. 

2. In a deep bottom pan, melt the butter. saute garlic until golden brown.

3. Add the onion.

4. Now add the marinated meat, do not include the marinade and just set it aside.

5. Cook the meat until its own juice comes out. stir occasionally to prevent scorching

6. Add the soy sauce marinade. cook until it almost evaporate.

7. Add 2-3 glasses of of water and keep it boiling. this will make your meat tender. lower the heat. cook until there is almost one glass left in the pan.

8. Add the potato and carrots let it simmer until it is half way cooked.

9. Add the tomato sauce liver spread and grated grated cheese. continue to boil in low heat. don't forget to stir.

10 Add the red bell pepper and sliced chilli

11. Cook until sauce thicken.

Kaldereta is best served with steamed rice. This is my own version of Kaldereta. Some would have green peas in their Kaldereta but I opt not to include that because I just don't like the taste of it. Whenever I cook Kaldereta my husband and kids cannot stop them selves from peeking in front of the stove to see if it is already cooked.
