YAKHNI PULAO





INGREDIENTS




  • Mutton                                                                          1kg

  • Onion                                                                              2

  • Rice                                                                                  ½ kg

  • Ginger                                                                               1 pod

  • Garlic                                                                                 3-4 slices

  • Cumin seeds                                                                     1 table spoon

  • Cloves                                                                                4-5

  • Cinnamon                                                                           1-2

  • Anise seeds                                                                         ½  table spoon

  • Black Cardamom                                                                1-2

  • Red chillies                                                                          1 table spoon

  • Salt                                                                                        to taste

  • Green chillies                                                                       2-3

  •  Yogurt                                                                                   1 cup

  • Turmeric powder                                                                  1 table spoon

  • Oil                                                                                             1 cup

  • Water                                                                                      3-4 cups



COOKING DIRECTIONS




  • In pan take mutton with 5-6 cups of water add cumin seeds, anise seeds, cloves, onion slices, ginger, garlic, black cardamom, turmeric powder, red chillies powder, green chillies, salt, Oil and let it to boil.

  • Make sure your mutton is tender and yakhni should be 2-3 cups. If less you can add more water.

  • Now add soaked rice in this yakhni with mutton and let rice to boil.

  • Cover the pan when bubbles appear on surface.

  • Serve with salad or raita.
