Cusines of Pakistan Pakistani cuisine is often spicy and also known for its richness. Most Pakistani cuisines are related by similar usage of spices. Often, Pakistani cooking is distinguished by the use of a larger variety of condiments than many other well-known cuisines. Within these recognizable similarities, there is an enormous variety of local styles. Food varieties have been distributed under the following types. It covers some foods from lot of cuisines cooked and used in country. Traditional Dishes Sweet Dishes Contemporary Dishes Traditional Dishes These are the dishes which have their ancestry from previous times. These have been cooked and served presently by same method. These dishes are also part of our culture. List of traditional dishes is long so we divide it under three headings: Dishes Rice Snacks Dishes This list includes the dishes which people like to eat in either lunch or dinner: Korma Shab Deg Kashmiri Roghan Josh Kabab (Shaami, Seekh, Chappal) Nihari Kofta Sajji Sabzi (Vegetables) Landhi Daal (Lentil Stew) Chappati Paratha Roti (Wheat, Corn bread etc) Poori Raiita Salads Rice Rice is the most famous item of Pakistani cuisine. People like to serve them to guests or to cook at special ocassions. Rice dishes are of several types according to its cooking recipes and taste as well. Some are given below: Pulao Biryani White Rices Snacks These are the dishes which are served at supper timings with tea. These served to guests and people enjoy them in various seasons also: Pakora Samosa Sweet Dishes These are the major items to be served at different occasions. Sweet dishes are the specialty of Eid-ul-Fitr. People like in-take desserts after meal. Some traditional desserts have been given below: Ice cream Kheer (rice pudding) Sweet Rice (Zarda) Jaleebi Sawayaan Gulab Jamen Halwa Laddu Juice Lassi Contemporary Dishes It includes food items which are not from this region. These food items become part & parcel of Pakistani foods with some variations. They reshape them by addition of condiments and application of their own cooking processes to set them for their own taste. Kaak, a rock-hard prepared bread Dampukht is also a Balochi dish which is prepared by meat and it is cooked in fats. Khaddi Kabbab is a dish in which Balochistanis cook a whole lamb or goat on fire. Usually there is raw rice in the stomach of the lamb and the rice is cooked by the fats of the lamb. The lamb is cooked on fire. Fish: a large number of Balochi people living on the coastal belt eat fish in their own style. Azad Kashmir The following are the famous cusines of Azad Kashmir. Rogan Josh (lamb cooked in spicy red gravy) Yakhni (lamb cooked in curd based gravy) Matschgand (minced lamb meatballs in spicy red gravy) Goshtaba (extra-minced meat balls cooked in creamy sauce) Qabargah (It is similar to Roasted Lamb; The Kashmiri Muslims refer to this dish as Tabakhmaaz) Kaanti (lamb pieces in red hot gravy, usually eaten as a snack and not part of the main course) Syoon Pulao (Meat Pulao) Modur Pulao (Sweet Pulao, usually as a dessert) Lyodoor Tschaman (Cottage Cheese cooked in creamy turmeric based gravy) Dum Oloo (Whole Potatoes cooked in spicy red gravy) Muj Gaad (Fish with Radish) Khyber Pakhtunkhwa The following are the famous cusines of Khyber Pakhtunkhwa province. Kabuli pulao Chappal Kabab Peshawari Naan Kandahari Naan Seekh Kebab Punjab The following list includes famous food items which are from Punjab region. Sarson ka saag (a dish prepared from green mustard leaves) and with Makki ki roti, a bread made by corn flour Kadhi Pakora (Kadhi is a type of curry made by cooking gramflour with curd or buttermilk. Fried lumps (Pakoras) of gramflour with salt and chillies are also added.) Chicken: tandoori chicken, butter chicken, chicken tikka. Lamb: rogan josh, bhuna gosht, kadhai gosht, raan gosht, dal gosht, saag gosht, nihari gosht, rara gosht, payon ka shorba. Kababs: Various lamb, chicken and beef kebabs. Daal makhani (lentils with cream and butter) Paneer dishes like Shahi Paneer, Khoya Paneer Sweet dishes like Phirni, Jalebi, Malpua, Sheer korma Sindh The following are the famous cusines from the Sindh region. Sindhi Baryani (Rices) Bahji (vegetable dish) called Chiti-Kuni is made with seven vegetables. Usually offer at Diwali celebrations Mitho lolo, a sweet griddle-roasted flatbread: the dough is wheat flour mixed with oil (or ghee) and sugar syrup flavored with ground cardamom. On special religious occasions, mitho lolo, accompanied with milk, is given to the poor. Mitho lolo is also served with chilled buttermilk called Matho on various occasions. Vermicelli, typically served as a sweetened (sometimes milk-based) dessert, is popular: Muslim Sindhis serve it on Eid. Kheer Kharkun, a special sweet dish, is prepared and served on Eid, it is prepared by mixing dates and milk, and slowly simmering the mixture for few hours.
