National Peking Duck Day

duckToday, January 18th, is National Peking Duck Day.

Peking Duck did actually originate in Peking (now known as Beijing) and is considered to be one of China's national dishes.

The duck is glazed and roasted and is then cut into thin slices and is served with steamed Chinese pancakes (the same type as is used to make spring rolls), spring onions, and possibly other vegetables, especially cucumber sticks, and sauce, such as sweet bean or hoisin.

The pancake is spread with the sauce and then the duck and vegetables are added on top. The pancake is then made into a roll and eaten by hand. Well, eaten by hand by other people, I use a knife and fork. As I do for most foods.
