Eggplant and It's Health Benefits


     We can buy eggplant  all year round in the market, but it is best during its season from August to October. In the Philippines the common variety of eggplant are the purple one. I heard that there are other varieties which are green in color. 


     Eggplant can be cooked in a lot of ways whether it be added in stir fry vegetables or just boil it and make a salad with onions and vinegar. I like it grilled first and peel the skin, mashed it and dipped in eggs and fry. Some add ground pork on it and it really taste good and eat it with rice and ketchup for sauce. 


     Research shows that eggplants has health benefits too, just like all fruits and vegetables it is rich in fiber. It is very low in calories and fats. It is also effective in controlling high blood cholesterol, it is also an antioxidant, and it also contains essential amounts of B-complex group of vitamins. Eggplant is also a good source of minerals like manganese, copper, iron, and potassium.



     Since eggplants are available all year round. Buy the healthy looking ones, if the stalk is stout, firm and green that means it is fresh. Avoid buying the shriveled ones. Eggplants can be used in a day or two if kept in a cool dry place or better yet keep it inside a refrigerator where they can be kept fresh for a few days.



     Now we can include eggplants in our diet. Since it also provides vitamins and minerals that are essential to our body.
