Pata Hamonado (Sticky Sweet Pork Hock)

INGREDIENTS

1 pieces pork hock, preferably the front one because it's meatier
3 cups pineapple juice
2 cups pineapple chunks
1 white onion, chopped
4 cloves garlic,minced
¼ cup soy sauce
¼ cup brown sugar
3 pieces dried bay leaves
2 cups water
1 tsp salt
1 tsp peppercorns
2 tbsp cooking oil

DIRECTIONS

  1. In a deep cooking pot, sauté onion and garlic until onion becomes translucent.
  2. Add peppercorns.
  3. Put the pork hock and cook on all sides for 5 minutes.
  4. Pour-in pineapple juice and water. Let boil.
  5. Add the soy sauce and bay leaves.
  6. Cover and simmer for 60 to 90 minutes until very tender. Add water, if necessary.
  7. Stir in the brown sugar,salt and pineapple chunks
  8. Simmer until sauce thickens.
  9. Transfer to a serving plate and Enjoy.
  10. Garnish with grilled pineapple on the side, if preffered.
