Roast Chicken with a Citrus Herb Marinade

INGREDIENTS:

  • 8 leg and thigh pieces
  • ½ cup orange juice
  • 1 tbsp lime juice
  • 1 tbsp lemon juice
  • 1 tbsp oil
  • 2 tbsp crushed garlic
  • ¼ tsp cumin
  • ½ tsp black pepper
  • ½ tsp red pepper flakes
  • 1 ½ tsp salt
  • ¼ cup cilantro
  • ½ tsp dried oregano

INSTRUCTIONS:

  1. Place all ingredients in a large resealable bag and refrigerate overnight. 
  2. Preheat oven to 400 degrees. 
  3. Remove chicken from the marinade and place on a baking pan; discard the marinade. 
  4. Place in preheated oven and bake for 45-50 minutes or until golden brown.
