    Sweet potato provides good amount of vital minerals such as iron, calcium, magnesium, manganese, and potassium that are very essential for enzyme, protein, and carbohydrate metabolism.



         Sweet potato top green leaves are more nutritious than the tuber itself. The eaves carry more iron, vitamin C, folatws, vitamin K,  and potassium but less sodium than it's tuber.


     Sweet potato leaves are being eaten in some parts of the world, but the roots are still the favorite in the market. Go for organic for best taste and nutrition levels.
