This is one of my favorite muffin recipe that I used to bake at home for festive seasons and birthdays.

You don't have to use a cake mixer to beat the muffin batter.

Instead, just use a stainless steel fork, lightly beat the batter and fill up the muffin cups 3/ full.

Never fill up to the brim.
