Crab Meat Newburg Day

Today, September 26th, is Crab Meat Newburg Day.

Lobster Newburg is the more commonly known variant of this dish, but it also includes any seafood dish that has the same sauce.

Lobster Newburg is attributed to a sea captain called Ben Wenburg; after an argument between him and the manager of Delmonico's Restaurant in New York, Charles Delmonico, the name was changed into an anagram.

The Newburg sauce which gives the dish its name is butter based and includes cream, sherry, cognac, Cayenne pepper and eggs, although ingredients may vary. This is served with crab meat. The definition of types of crab meat can vary from country to country, with different countries having different naming conventions and grades.
