JO’S BUTTERMILK FRIED CHICKEN

This Buttermilk Fried Chicken is super juicy, tender and so delicious! Perfect for lunch or dinner and served with a side salad.

Fried chicken is one of my favorite things to eat. I love fried chicken served with a side of mashed potatoes, a great salad, or simply just plain!  Unfortunately I don’t make fried chicken often, well because it’s not the healthiest thing to eat, but it’s great every once in a while, like when you have friends over.

Fried chicken is one of those first things you learn to make because it’s so simple. I think fried chicken is really in anyone’s culture, so you could say I learned it at home. My mom’s recipe is a bit different, there is no buttermilk and hot sauce in hers. What I love the most about frying chicken is the smell, the entire house smells like fried chicken and it is just wonderful.

For this fried chicken I used chicken wings, but you can use anything you want, chicken breast, drumsticks, they all work really well.

Wash your chicken and dry it with paper towels. In a bowl mix the liquid ingredients and spices, so the buttermilk, eggs, paprika, hot sauce, salt and pepper and mix really well. If you want this spicier use more hot sauce. In another bowl, combine the baking powder and baking soda, and then whisk into the buttermilk until it becomes foamy. Now what I like to do is get all my chicken ready so I get all the messy stuff out of the way and then all I have to do is fry the chicken. In another shallow dish, add about a couple cups of flour and set this next to your buttermilk mixture. So this is very simple, first you dredge the chicken pieces in the flour, then dredge it in the buttermilk mixture and again in the flour mixture. So it’s flour, buttermilk flour. Do all your chicken now and place them on a large plate.

In a frying pan, heat lots of oil, at least an inch. Do not put too many pieces at once, leave enough room in between the chicken, because you don’t want them to stick together. Also if you put too much chicken, the chicken might not cook all the way through.

The first side will take longer to cook maybe about 7 min, and the second side will cook faster, 3 to 5 minutes, so be patient and let the chicken cook properly. Repeat with remaining chicken.

After the chicken is fried, place them on paper towels to soak up some of the oil and sprinkle some salt over it. And that’s all there is to this fried chicken.

INGREDIENTS
  • 2 cups buttermilk
  • 2 eggs
  • 1 tsp paprika
  • 1 tsp hot sauce
  • salt and pepper to taste
  • 2 tsp baking powder
  • 1½ tsp baking soda
  • flour
  • 1 lb of chicken wings, or chicken breast
  • vegetable oil for frying
INSTRUCTIONS
  1. Wash your chicken and dry it with paper towels. In a bowl mix the liquid ingredients and spices, so the buttermilk, eggs, paprika, hot sauce, salt and pepper and mix really well. In another bowl, combine the baking powder and baking soda, and then whisk into the buttermilk until it becomes foamy.
  2. In a shallow dish put about 2 cups of flour alongside the buttermilk mixture.
  3. First dredge the chicken in the flour on all sides, then dip into the buttermilk mixture and make sure it's coated well all around. Dredge the chicken in flour one more time, then place the chicken on a plate, and repeat with all chicken pieces. So it's easy, flour, buttermilk, flour. If your flour gets too dirty just throw it out and start with some fresh flour.
