Use Pumpkin This Fall If Ya Got It!!!

Pumpkin is healthy and might be very plentiful in the fall, depending on where you are. My pumpkin patch is almost completely harvested, and I am ready to start using it in receipes.

We think first of pumpkin pies, which are delicious and provide some nutrients with desert. Pumpkin seeds can be spread on an oiled flat pan and salted and roasted. And pumpkin makes great fillers and deserts.

Here are ricotta stuffed shells with pumpkin yougurt sauce. To make the sauce, puree pumpkin, add yougurt, shallots, and seasonings to taste. Spread over your favorite pasta.
