APRICOT COCONUT SNACK BALLS

INGREDIENTS
  • • 1 cup raw nuts (i used almonds here, feel free to mix it up)
  • • 1 cup dried, unsweetened apricots
  • • 1 tsp vanilla
  • • 2 tbsp coconut oil
  • • 1 tbsp raw honey
  • • 1-2 tbsp water (or coconut or almond milk)
  • • pinch of sea salt
  • • unsweetened desiccated coconut, for rolling
 
INSTRUCTIONS
  1. Place nuts in food processor. Blitz until finely chopped, but not completely powdered.
  2. Add all other ingredients except water, process until well mixed and chopped.
  3. Add the water/liquid of choice a little at a time, just until the mixture starts coming together and is sticky.
  4. Prepare a wide plate or tray next to you, and spread a generous layer of the dessicated coconut into it.
  5. Now, the fun part. Wet your hands slightly with cold water, and scoop up approximately teaspoonfuls of the mixture and roll it into tight balls. Place the balls into the prepared plate, and roll them into the coconut until well coated.
  6. Place in the fridge to firm up, then they may be stored in an airtight container in the fridge for up to 2 weeks...although I highly doubt they will last that long.
