Famous Indian Street Foods – Snacking Time

Tea time! Impossible to forget snacks, right? Its obvious snacks are very instant and mood making food for celebrations and tea timing. But if these snacking is offer at streets where one can enjoy nature with mouth watering foods then it’s like enjoying the wonder time. Yes, we are talking here about street foods. Who can forget their loud shouts of greet to taste their foods. Today I am going to discuss in my blog about Indian street foods. You know one secret – Indian street food is well controversial for using well amount of spicy. But it’s also true if one taste their snacks never stop to praise their taste and to try again. Today I will share with you some of the most famous and delicious street foods recipes which I mostly try in home. So let’s start

  PANI PURI

Pani Puri which is also commonly known as Golgappa is well famous street snack of India. Mostly this tangy delicious snack is available in every region of India. Wow, this mouth watering snack attracts itself everyone to enjoy its sweet tangy and crunchy treat without any argument. Really if once anyone tastes, they will  never stop to try again this delicacy. And of course it’s one of my favorite nibble. The hawker’s ready their stales marvelously with large quantity of Golgappa and it’s tangy spicy tamarind water. And you know what’s amazing after working day all  sold-out.How to make these Golgappa, right?

Golgappa’s are traditionally crunchy fried round Puri, or puffed wafer, that is hollow inside. These golgappa is filled with tamarind water, onion, black chickpeas and boiled potatoes to give it flavor. It’s very easy to try it in home if you like. Let see – the whole recipe is divided into two steps first is Puri and second one is Pani. To make Puri one need ½ cup flour, 1 cup water, 1/3 cup vegetable oil, ½ tsp salt and ½ tsp baking soda powder.  You just need to make stiff dough with all these ingredients and keep aside for 5-6 minutes. Now make flat round about ½ inch thin and cut small rounds. Just fry these small rounds in vegetable oil. While puffed and change its color to light brown remove from oil and keep aside on tissue paper for ½ hour. (Keep in mind fry Golgappa’s on slow flame)

For filling you need ½ cup tamarind, 1/3 cup sugar, 2 spoon lemon juice, 1 tsp red chili powder, 1 tsp salt, 1/3 cup chopped mint, 1 finely chopped onion, 1 chopped boiled potato, 1/3 cup boiled black chick peas. First dip tamarind in fresh water for ½ hour. After extract tamarind seeds and properly mash it in water to transfer it's  tangy taste in water. After sieve the water and mix  salt, chili, onion, and mint in tamarind water. Freeze the water to get it chilled.

Now take ready Golgappa’s and one by one with your finger  make a small hollow on upper side to fill it with black peas, potatoes, and water. Now open your mouth and in once bite eat Golgappa's one by one. 

ALOO TIKKI

If you are thinking these looked like mashed potatoes patties then you are somewhat right. Somewhat, why so? Because these are mashed potatoes patties which are spices up with various traditionally sauces well liked in India. Let divide this recipe into two proportions - first is patties and second one is sauces. To make patties you need 1 cup mashed boiled potatoes, ½ cup boiled Bengal gram, 1 chopped onion, 1 tsp salt, 2-3 spoon chopped coriander,1 tsp red chili powder, 1/3 cup bread crumbs, 1 tsp green chilies chopped, and vegetable oil for shallow fry. First mix all ingredients except oil and make small balls with this mixer. Now one by one keep these balls in your hand palm and press to give it round shape. Pre-heat the pan and shallow fry on medium flame.

Now to spice up these tikki’s mostly three sauces are used that are green coriander sauce, tamarind sauce, and hung curd. To make coriander sauce you need ½ cup coriander leaves, 1 chopped tomato, 1 tsp lemon juice, 2 tsp green chilies and salt as per taste. With few water Blend all ingredients in blender sauce is ready. To make tamarind sauce dip ½ cup tamarind in water for ½ hour and after separate the seeds and properly mashes the tamarind to mix the pulp into the water. Sieve the water. Now in a pan boil the tamarind water, after 2-3 boil add ½ cup sugar, ½ tsp salt, 1 tsp red chili powder, and 2 tsp fresh roasted cumin powder. One agoin boil all ingredients together for 1-2 times and then off the flame and chilled it in freezer.

Now to take 1-2 tikki’s and spread over hung curd, green sauce and tamarind sauce on tikki's. Now you can also add sliced onion and radish to enhance the taste. ( You can adjust the spicy as per taste)

 

ALOO SAMOSA

 

Samosa’s, Indian style fried pie, is one of the famous snack which is easy to make. You can easily try this snack in home to serve in special occasion. This recipe is also ready in two steps first ready the dough for crust and second part is to ready filling. To making dough basic ingredients used are 1 cup all purpose flour, 4-5 spoon vegetable oil, ½ tsp salt, ½ tsp carom seeds, water. First Kneed semi stiff dough with all ingredients and lightly spread oil over dough, cover with cotton cloth and keep aside for 10-15 minutes.

Now for filling you need 1 cup Finely diced cut boiled potatoes, 1/3 cup boiled green peas, 2 spoon diced cut cottage cheese, 1 tsp crushed coriander seeds, 1 tsp cumin seeds, 1 tsp green chili chopped, 2 tsp oil, salt as per taste, ½ tsp dry mango powder or lemon juice, 1 tsp red chili powder, 1/3 cup chopped green coriander. In a pan pre-heat vegetable oil and splutter cumin, coriander seeds and then adds boiled potatoes, peas, and cheese. Finally add spices and remaining ingredients. Mix all ingredients well and cook for 2-3 minutes on slow flame. Off the flame and keep aside mixture to come on room temperature.

Now with ready dough make small balls and one by one make a flatten round with dough. Now cut the round within center into equal parts. Take one part and join the edges to make a cone use water to bind the edges and now fill mixture in the cone up to half and again join the end open edges of cone. Do same process with remaining balls.  In wok pre-heat vegetable oil for deep fry the Samosa’s. And start deep frying until Samosa’s color change to golden brown. 

 

CHAAT

This is Spicy small split white gram cakes pampered with crunchy flour crispies or crackers which are spiced up with different sauces and spices. India these gram dumplings called bhalla or vada and crunchy crackers denoted as papdi.  Let see first how to ready these bhalla or vada and papdi. First to make vada you need ½ cup urad dal or gram, ½ tsp Asafoetida, 1 tsp salt, 1 tsp black pepper, water for soaking and grinding the gram, And oil for deep fry. First to ready bhalla’s soaked the gram into water for 4-5 hour. After drain the water and in grinder grind the gram to make a smooth drooping paste, no more thick or watery. After soaks Asafoetida in 2 tsp hot water for 1-2 minutes then mix in batter. Now season the batter with salt and black paper. Keep aside for 20-15 minutes for fermentation. After in pre-heated oil Deep fries the dumplings. You can use spoon to make these bhalla’s, just fill your spoon with batter and drop in hot oil. To make bhalla’s soft you can add ½ tsp baking powder but it’s optional.

Second stage you need to ready papdi’s which is made with whole wheat flour. To ready have ½ cup flour, ½ tsp carom seeds, 4-5 spoon vegetable oil, pinch of salt and water to kneed the dough. Mix all ingredients together and make stiff dough. Keep aside for 10-15 minutes. Now if you remember to make Golgappa’s we first make large flatten round then cut them into small rounds. You have to repeat the same process here but one thing which is differ while making large round keep it thin as much you can or secondly prick with fork then cut into small rounds. After in pre-heated oil deep fry the papdi’s.

Now assemble chaat with bhalla’s, papdi, sauces, and spicy. After frying pre-heat water and soak the ready bhalla’s in hot water for 3-5 minutes then after drain the water and one by one press bhalla’s with your palm to removes soaked water. Do this process just few minutes before of serving. In plate or bowl add bhalla’s, papdi’s, diced cut boiled potatoes then give first layer of beaten curd, second layer of green and tamarind sauce, sprinkle salt, black pepper, red chilies, and fresh roasted cumin powder.  Serve chilled.

 

DHOKLA

 

 

Dhokla is the one of the most famous Indian snack and best choice for breakfast. This soft fat free delicacy is easy to cook and quick to ready.  Once you try this recipe it’s sure you will demand again. You know its secret behind this recipe it’s seems very easy but need more consciousness.  Let see it's recipe. The basic ingredients to ready the Dhokla is 1 cup chick pea flour, ½ cup semolina, 1 tsp turmeric powder, 1 tsp salt, 1 tsp red chili powder, 2 spoon fruit salt or Eno, ½ tsp sugar, I tsp vegetable oil, 1 cup curd, 1 tsp Asafoetida and steamer for stemming. First in the mixing bowl mix all ingredients except fruit salt for making dropping batter and adjust it’s consistency with adding water.  Then keep this batter ½ hour for fermentation. After ½ hour ready the steamer and grease the any cake mould for pouring the batter. Now It’s time to mix the fruit salt in the batter. Mix well and after mixing batter will be fluffy now it’s time to immediately pour the batter in mould for steaming. Stem batter for 15- 20 minutes. After check with skewer if come clean then its ready, otherwise steam for another few minutes to cook well. After cooking remove the Dhokla from steamer.

Now it’s time to ready the flavor  this savory cake. For this you need 2 tsp mustard seeds, ½ cup tamarind water, 2 tsp lemon juice, 1 tsp salt, 1 tsp red chili powder, 2 cup fresh water, 2 tsp mint leaves, 1/3 cup  coriander leaves, 1 tsp vegetable oil and 1/3 cup suger. First in a pan pre-heat oil, then splutter mustard seeds, then add tamarind water, then add salt, red chili, lemon juice, mint, sugar and water. Boil for 2- 5 minutes until sugar dissolve and off flame. Now keep it for few minutes to come it on room temperature.

Now cuts the Dhokla into pieces as you like and spread the ready seasoning on Dhokla pieces. Now garnish with coriander leaves. It’s time to keep it in freezer until get chilled. Enjoy as you like.

PAV BHAJI

If you think it’s a meal then you are somewhat right. But it’s one of the most famous snacks of India’s big town Mumbai. This snack is well liked all-over the India. You know the one very excellent thing about this snack its nutritional properties. Yeh, this messy yet delicious treat is ready with the combination various nutrition rich veggies. Let’s quickly see its recipe.

For this you need 2 spoon garlic paste and ½ tsp ginger paste, ½ cup chopped onion, ½ cup green capsicum, and ½ cup butter, 2 cup chopped skin peeled tomatoes,  ½ cup potatoes, ½ cup carrot, ½ cup zucchini and 2 spoon Pav Bhaji masala, coriander for garnishing, 2 spoon salt, 1 spoon red chili powder, Lemon juice, and bread buns or Pav.

In a wok melt butter sauté’s garlic and ginger paste. After 2-3 minutes add onion and capsicum while onion or capsicum releases its raw texture add chopped tomatoes. Cook until butter separated and then add salt, red chili, Pav Bhaji masala. Now take boiled veggies and mash it with masher and add in the ready tomato mixer. Now add 1 cup water and cook on slow flame until all veggies mix well  

If Bhaji get ready mix lemon juice and then serve it with bread buns. For this first heat the Pav on pan with butter.  Garnish with coriander leaves and Now it 's ready to serve.

 

MASALA DOSA

How big treat!  Can we try it in home? Yeh, really you can make this big dosa in you kitchen. This rice and split white gram thin crust pancake is one of the famous south Indian snacks and well demanded. For making it in home first you need to soak over night the 1 cup rice and 1/3 cup gram in water separately. After  drain the water and grind both separately with fresh water and make a fine paste.  Mix both batters and keep aside for 1 hour.

No ready it’s filling. Usually you can try any filling which you like as cheese, potatoes, onions etc. Here we are preparing boiled potatoes filling. To ready this you need ½ cup boiled potatoes, 1 tsp salt, 1 tsp mustard seeds, 1 tsp gram, 1 green chili, 1 spoon coriander leaves, 1 spoon vegetable oil, and 1 tsp turmeric powder. First in a pan pre-heat oil and splutter mustard seeds and gram then add onion and sauté’s until transparent. Now add spices, coriander leaves and potatoes and mix well.

For making dosa first mix salt, black pepper and Asafoetida in batter. Now pre –heat pan add spread a thin layer of batter over pan. Cook until upper layer get dry then flip and properly cook both sides. Now in the centre pour ready mixture and turn round the dosa to lock the stuffing. Cook for 2-3 minutes and serve with sauce. In Indian dosa mostly serve with samber and tomato, coconut sauces.

 

PAKORA'S

 What is pakroa, right? Its Indian style fried onion fitters. Yeh, these fitters are very delicious and best tea time snack to enjoy a pleasant whether. Usually in India for making fitters chick pea flour (basan) is used. In chick pea batter you can add any vegetable which you like to enjoy crispy fried treat. Now, let come to how to ready these delicious Indian fried treat. For this you need 1 cup chick pea flour, ½ cup sliced cut onions, 1 sliced cut potato, 2-3 spoon coriander leaves, I tsp salt, I tsp red chili powder, I tsp green chili chopped, 1 tsp oil, ½  tsp raw mango powder and fresh water. Now first in a mix bowl add flour, red chili powder, salt, mango powder, and green chilies, sliced potato, onion, coriander and mix all well. Now ready a thick consistency batter with fresh water. Finally add 1 tsp oil. Now pre-heat vegetable oil and drop batter in oil by using your hands or spoon and deep fry until golden brown in color. Keep batter on tissue pepper to absorb extra oil and serve with sauce. 

 All these recipes are easy and quick. You can also try these in home and if needed adjust spices as per taste. But you know this list is not end here because it’s endless.
