A super-refreshing lime cooler with a hint of lemongrass flavor. Serve this with some ice and sliced limes for a reliable thirst quench.

INGREDIENTS
- 6 limes halved
- 3 cups boiling water
- 6 tablespoons sugar
- 1 long fresh lemongrass stalk
INSTRUCTIONS
- Squeeze the lime halves collecting the juice in a bowl
- Bring the 3 cups of water to a boil and add the already squeezed lime's and sugar.
- Smash the lemongrass stalk with the side of a knife and tear open with your fingers to expose the scent and flavor of the lemongrass.
- Place the lemongrass into the pot with the limes and gently stir. Let sit for at least 15 minutes.
- Pass the lime syrup through a sieve directly into the fresh squeezed lime juice and stir.
- Add a handful of ice cubes to the mixture and store in the refrigerator until cool.
- To serve, fill a glass with ice cubes and top up with the lime juice.
- Add a garnish of a few more sliced limes and a lemongrass straw if desired.
