National Gazpacho Day

Today, December 6th, is National Gazpacho Day.

Gazpacho is a type of soup that originated in the Andalucian region of Spain, although it may be descended from older dishes.

This soup is usually served and eaten cold during the summer months. The traditional Andalucian dish is made from tomato, cucumber, bell pepper, onion, garlic, wine vinegar, water, stale bread and salt.

The dish can vary widely in both the ingredients used and the final texture, with even the bread and tomatoes replaced with other ingredients, and, the traditional dish is a vegetable soup, modern dishes can include meat stock and seafood.
