Pesto Egg Salad Sandwiches

1/2 cup mayonnaise
4 teaspoons pesto
1/4 teaspoon salt
1/8 teaspoon pepper
6 hard-boiled eggs, chopped
8 slices of bread
 
 
In a small bowl, combine the first four ingredients. Gently stir in the eggs. Spread mixture over four bread slices and add desired toppings such as lettuce, tomato, or onion. Top with remaining slices of bread.

- Make it healthy! Try a healthier version of this sandwich by using fat-free mayonnaise, whole wheat bread, and removing the yolks from 3 of the eggs.
