National Pecan Cookie Day

Today, 21st September, is National Pecan Cookie Day.

Cookies, as they are known in the United States and Canada, which are a small and flat, usually baked, sweet treat, are known in most other English speaking countries as "biscuits," but both terms are sometimes used in the same region to describe different types.

There are many types of cookies and biscuits. Some are baked until they are still mostly soft, whilst others are not baked at all.

Pecan cookies use as an ingredient the nut of the pecan tree, a type of hickory native to areas of North America.
