Medu Vada:

Lets make a list of what you need

  1.  Urad dal also known as Vegna mungo                
  2. Herbs that you can add: Cumin seeds, black pepper
  3. Curry leaves    
  4. Chopped green chili 
  5. chopped ginger 

How to Process Urad dal

You need to soak Urad dal for 5-6 hrs before you grind it. Then make a paste of it by grinding. Make sure that you add no water. You can grind 1 onion along with it. The batter should be smooth, fluffy and thick. 

There is no need to ferment this batter.

Add green chili, cumin seed, black pepper, chopped ginger and salt as per your taste.

Take Oil in a deep frying pan and heat them nice and hot.

Keep some water in a bowl and wet your hand before taking the batter in your hand. This will help your batter not to stick in your hands. Take the batter and make it round shape and give a hole in the middle. and pour them in hot oil to fry. Fry both sides till it turns golden and crispy.
