Poha (flattened rice) ..............a Perfect breakfast :)

Flattened rice 3 cups (sock in water)
mustard seeds 1 tspoon
green chilies 4 nos chopped
onion 1 nos sliced
potato 1 nos(small dice)
1/2 cup peanut or cashews
turmeric
curry leaves
fresh coriander chopped
salt
Preparation
Soak the Poha for 5 mins then drain it.
Have potatoes cooked separately.
Heat the oil in a pan. Once the oil is hot add mustard seed wait till it crackles. Add diced onion and green chilies. Fry until translucent. Add curry leaves, turmeric powder and peanuts. Add Potatoes and saute it. Add poha and salt and mix it well. cook for 5 mins and its done. Garnish it with coriander leaves.
