Baking soda, also known as Sodium bicarbonate, is an alkaline compound composed of sodium ions and bicarbonate ions. It is found crystalline form in appearance with a white color and is usually ground to a fine powder for easier use. The taste can be compared to sodium carbonate or washing soda with a salty, alkaline taste.

Baking soda is widely known to be used in baking and cooking. This because it has leavening properties that allow the dough to rise. Sodium bicarbonate when combined with acidic components in the batter,   causes a chemical reaction within the mixture allowing it to produce carbon dioxide gas. This gas becomes small bubbles and gets trapped in the batter causing it to inflate or rise which causes the dough to expand and form the characteristic texture found in doughs and batters. Additionally, heat can also be used via thermal decomposition to release the carbon dioxide. This can be done by exposing the mixture to temperatures above 80 degrees Celsius, although, when done this way, the carbon dioxide released is only half as opposed to using an acidic reaction.

Not only is baking soda used in cooking and baking, it can also be used in a variety of ways. Baking soda can be used for cleaning. It can also be used to benefit the body, it can be used as a treatment for various hair, skin, and body health problems.
